How to Use

  • Cut the meat into strips and weigh
  • Calculate spice required @ 45g/kg of cut meat
  • Optional: add Worchester Sauce or Vinegar or both @ 50g per 100g meat. Jimmy’s Sauce can also be added to taste
  • Mix the meat and spice well, cover and refrigerate overnight
  • Hang to dry
